We welcome you into our home with open arms! Immediately, you will feel part of our family and our traditions. We begin our welcome, the same way my abuela did with me, with hot chocolate and pan. I love to share my stories and traditions of my culture with you. Classes can be in spanish or english. Our class will take place in our beautiful outdoor kitchen, located on our terrace. You will learn to prepare food and cook in a traditional Oaxaqueña kitchen, called a brasero – a traditional brick stove, with open fire. We will get busy in a hands-on cooking experience where you will learn to prepare appetizers, traditional drinks, salsas and main dishes. In the culmination of our hard work, we will share in a group meal around the table with food, drink, stories, laughter, love and of course, mezcal. We look forward to connecting with you over food and flavor; one of my cultures oldest traditions.

The Mardi Gras School of Cooking does small, intimate hands-on classes in the French Quarter. Classes are more like a dinner party with friends. Feel welcomed into our kitchens by the Chefs themselves. From the moment you arrive until you roll out the door our Chefs are friendly, personable and entertaining. After that we are getting ready to cook together, I will show you how to cook our couscous step by step and I will share with you all the recipes I learned from my grandmother. Finally, we appreciate our work, we will savor our preparations with a great Berber mint tea! I'll show you the secret of good! Welcome to Essaouira with another kind of experience different from regular cooking classes.

Kolam is a traditional art originated in South India. It is a tradition for women to practice it every morning by putting ephemeral patterns on the front door. It is a way to meditate and also to invite Goddess and prosperity to their home. In this 1.5-hour class, you will not only learn how to make kolam, but also get some insight about Indian culture. Both children over 6 years old and adults are welcome to experience this unique culture of India!
